The processing of vegetable oils, PUFAs and inflammation are why my partner uses animal fat in the deep fryer at his restaurant. Most restaurants use Canola.

I get annoyed when I see dieticians and other “wellness experts” promote Canola. I’m not entirely surprised that some of them have partnerships or have gotten freebies from canola companies, and yet those partnerships, and that they’d want to work with those companies, bewilder me. A health expert who tells me that Canola oil is healthy loses credibility with me.

To your other points, fish and other sources of fat (EFAs) have greatly helped my brain health, and I recommend those to others. More and more people are starting to believe that fat is healthy, but it’s still an ongoing process to educate. People have trouble understanding what doesn’t make sense to them, and the “low fat/non-fat” rhetoric is so ingrained in our culture that it’s hard to change minds.
